Pinot Auxerrois

With natural fermentation and aging in large Acacia wood barrels, the successor to the 2019 white Pinot Auxerrois is a complex, gourmet wine. The nose is lively with agrum, spring blossoms, pome fruit and some toast. That extroversion continues on the palate with a combination of density and fraîcheur. The acacia wood melts beautifully and gives the wine length and spice. A touch of Pinot Gris and Pinot Blanc provides extra width and tension. The small bitterness in the final makes it an ideal food wine.
