Bonnet Orange

Bonnet Orange is made by leaving Pinot Gris grapes together in a cuve for a period of time. In this way, extra colour and a little tannin comes from the white grape. The winemaking itself took place partly on concrete and partly on cuvees in baked earth. The wine was not filtered, so a little dépôt at the bottom of the bottle is certainly possible.
