Céline grows her vines between Tonnerre and Molosmes, on an exceptional wine-growing terroir with quality potential equivalent to that of the finest terroirs in the Chablis region.
The subsoil is extremely chalky, the soil is stony and well drained, ensuring that the grapes reach optimum ripeness.
The slopes have been planted with optimum exposure (south, south-east), on steep slopes benefiting from plenty of sunshine.
To date, the vines are located at the following sites
"Les Boutôts" and "Les Noirots", totalling 5 hectares in production.
To bring out the best in this terroir, she attaches great importance to the way the vines are trained.
The quality of the wines depends mainly on the quality of the grapes. She bases her wine-growing on three guiding principles: controlling yields, ensuring that the berries are of the highest quality and matching the ripeness of the grapes to the organoleptic qualities of the musts.
