Domaine de Sulauze
Karina et Guillaume Lefèvre
Guillaume Lefèvre and his wife Karina are phenomena! In just a few years, they have become THE benchmark for biodynamics in Provence. They even organize an annual show at home which becomes an unmissable event for lovers of beautiful discoveries (agrology show). Their conception of life goes far beyond the simple production of a biodynamic wine. Guillaume and Karina are not only wine enthusiasts but also great lovers of life and nature. Their human values make them exceptional people. Their domain welcomes many people in search of truth (such as their now famous friend Pierre Rhabi). The wines are totally confusing by their explosion of fruit in the glass. Everything is suave and captivating at will. You can hardly find more pleasure in a wine! Purchased in complete decrepitude in 2004, the Estate is made up of an old Provencal hamlet surrounded by 80 hectares of various crops, all biodynamic! Guillaume took this reasoning to the extreme since he cultivates organic wheat and produces his bread (as well as for the neighbors) in the wonderful antique bread oven backing onto the central house. He even dabbled in artisanal biodynamic beer. He also has a Spanish bull farm which supplies him with horns for biodynamic treatments. The Domaine de Sulauze is in my opinion the most beautiful reference in the world in terms of biodynamics because the logic of Steiner (a single domain in self-sufficiency thanks to mixed farming) is applied to it to the letter. In Sulauze, biodynamics is thus a conviction that is not "thought" but is "lived" squarely on a daily basis. It is simply wonderful. All the wines are in natural yeasts and without sulfur. (only the rosé and the white are very slightly sulphite when put on). The labels however indicate "contains sulphites" for simple legal reasons and in order to avoid export problems in so-called "sensitive" and fussy countries (USA, Japan, ...) because some vintages may contain natural sulfur. from fermentation.
