Domaine Dieu-le-fit
Rémi Pouizin
Rémi Pouizin is a genius winegrower ... a real one! To begin with, it should be noted that his vineyard is one of the extremely rare vineyards (to my knowledge there are only one or two others like him in France) to NEVER have known the slightest chemistry on his land! This is a first point that deserves to be underlined. The vineyard has therefore always been run organically and, since 1997, it has been biodynamic. Rémi does not use any animal preparation on his estate, however, but only vegetable preparations. Intercropping, compost, the use of lacto-fermented, herbal teas and essential oils form the basis of his work. Consequently all the cuvées have an admirably complex and smooth bouquet where lavender generally dominates. It should also be noted that Rémi never uses sulfur during the harvest or during winemaking. Only a few wines are sulphated in order to stabilize them in a reliable way for exportation in distant countries but, for the rest, Rémi is a big fan of sulfur-free wines. I love these wines because they are rich and delicious
