Xavier Couturier and Pierre Sanchez, the founders of Duo Oenologie (180 independent winemakers trust them) allow Pépin to have quality wines while accompanying the winegrowers in the vinification of Pépin.

Each cuvée is made from organically grown vines, harvested by hand, with no inputs during vinification, using only indigenous yeasts (from the cellar and the farm) and no added sulphites.
